Vinification
After fermentation in steel tanks, the wine is placed in Allier oak barriques, where it rests at a controlled temperature for at least 12 months, in contact with its own lees. As a result, we obtain a great build-up of mannoproteins, which, combined with the vanilla note of oak, give the wine its special EVO-lution, making it more complex, smooth and velvety. It then rests for a further 12 months in the bottle

Straw yellow with greenish reflections
Aroma
Delicately aromatic, with hints of apricot, sage and lesser calamint, which elegantly blend with the vanilla notes of Allier oak
Flavour
Persistent and elegantly complex, it is reminiscent of citrus flavours, ripe yellow fruits, tropical fruits and smooth tannins. Dry finish.
Food Pairing
Ideal with shellfish, asparagus risottos, fish soups, baked turbot and salmon, white meat.
