Vinification
Soft pressing with cryomaceration at 6°C for eight hours. Vinification in white at a controlled temperature. Cold decanting. Fermentation in new French Allier oak barriques. Permanence on the lees for a year with frequent stirring. Malolactic fermentation.
Aging
A short period in new French oak barriques and then aging in stainless steel tanks. A long period in new barriques would hide the typical characteristics of Chardonnay
Colour
Straw yellow with golden reflections
Aroma
Floral, fruity, reminiscent of ripe apple and tropical fruit, with elegant hints of vanilla
Flavour
Full-bodied wine with an intense flavour. Dry.
Food Pairing
It is ideal with important fish dishes, including raw fish (scampi and oysters), white meat and medium-mature cheeses
