Bocca di Rosa

Bright rose-pink colour, plenty of foam with a fine and lingering perlage, scent of berries and citrus notes, rich and mineral taste for this fascinating rosè.

Wine area: Pramaggiore
Grapes: Merlot e Refosco 
Vineyard: Guyot
Soil: Clayey-calcareous
Vine density: 4.000 plants per hectare
Harvest time: First fifteen days of September. Grapes are harvested in advance to maintain an high acidity. Level and a controlled level of sugar.
Vinification: Cold maceration for 12 hours. Rising of the vinasse, separation of the must without pressing of the lees. Fermentation with selected yeast at controlled temperature, to preserve the floral and fruity bouquet.
Ageing: In steel tanks
Alcohol content: 12,5% vol.
Total acidity: 6,2 g./l.
Colour: Rose-pink, recalling the color of the flower
Bouquet: Fresh and vinous
Taste: Fresh and lingering, with notes of red berries

Gastronomic matches: Excellent as aperitif, it matches perfectly with cold opening courses and particularly with fish hors-d'oeuvres. It should be served at 6-7°C to bring out to fineness of the perlage.
